Apple Betty

I still have tons of apples and even though this dish isn't specifically mentioned in the Canon, with a name like Apple Betty, it may as well be there. I've been making this for years. Think of it as Dutch Apple Pie without the pie crust.


APPLE BETTY

4 cups sliced, pared tart apples
1/4 cup orange juice (or lemon juice if the apples are sweet)
1 cup sugar
3/4 cup sifted flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup butter

Mound apples in buttered 9" pie plate; sprinkle with orange juice. Combine sugar, flour, spices and dash salt. Cut butter in till mixture is crumbly; sprinkle over apples. Bake at 375' for 45 minutes, or until apples are tender and topping is crisp. Serve warm with vanilla ice cream. Yum.
